Mushroom Masala

Ingredients:

For Mushroom Gravy:

  • 2 tbsp oil
  • 1 tbsp ghee
  • 1 tsp cumin seeds
  • 1 inch ginger, sliced
  • 3-4 garlic cloves
  • 4 onions, sliced
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp red chilli powder
  • 2 tomatoes, chopped
  • 2 tbsp curd, beaten

For Rinsing the Mushrooms:

  • 250 gms NutraGro button mushrooms
  • ¼ cup wheat flour

For Mushroom Fry:

  • 1 tsp oil
  • 1 tsp ghee
  • 1 bay leaf
  • 1 inch cinnamon stick
  • 1 clove
  • 4 black peppercorns
  • 1 green cardamom
  • 1 black cardamom
  • 1 onion, sliced
  • 1 tsp red chilli powder
  • Salt to taste
  • A pinch of kasuri methi
  • 3-4 coriander sprigs

For Garnish:

  • 2-3 coriander sprigs

Step-by-Step Instructions:

  1. Preparing the Gravy:
  • In a kadai, heat oil and ghee. Add cumin seeds, sliced ginger, garlic cloves, and sliced onions. Sauté well until the onions turn golden.
  • Add turmeric powder, coriander powder, and red chilli powder. Mix well and add chopped tomatoes. Sauté until the tomatoes become soft.
  • Season with salt to taste and add beaten curd. Let it cook until the mixture is well combined and smooth.
  • Add water as required to achieve the desired consistency. Blend the mixture to a smooth gravy and set aside.
  1. Rinsing the Mushrooms:
  • In a mixing bowl, add NutraGro button mushrooms, wheat flour, and water. Rinse the mushrooms thoroughly and drain.
  1. Frying the Mushrooms:
  • In a pan, heat oil and ghee. Add bay leaf, cinnamon stick, clove, black peppercorns, green cardamom, and black cardamom. Sauté until aromatic.
  • Add sliced onion and sauté until translucent. Add red chilli powder, rinsed mushrooms, and salt to taste. Sauté well.
  • Pour in the prepared mushroom gravy and cook for a minute.
  • Sprinkle a pinch of kasuri methi and garnish with fresh coriander sprigs.

Serving Suggestion:
